Let’s cook!


As always, I am assisted by the lovely Amber who must inspect all food products before preparation.

I thought it was time to join a few of my other blogging friends and share some recipes. My collection is not worthy of another entire blog site, but periodically I will try to remember to post recipes that fit my criteria for success: Fits into my busy schedule by taking less then an hour (preferably 30 mins) to make and requires little to no chopping/shredding/slicing. In other words, it is probably a mix of some fresh ingredients with some pre made items. Non-gourmet IOW  🙂 If you are someone who prefers to make all your meals from scratch – sorry! I made these two recipes this week and they passed the taste test with flying colors. Yummy as leftovers too.

For the Seafood lovers – basic linguine with Scallops

  • 2 tbsp olive oil
  • 3 tbsp butter
  • 1 medium onion thinly sliced
  • 1 28oz can Italian peeled tomatoes
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp crushed hot red pepper
  • 1 cup dry white or red wine
  • 1lb linguine
  • 1lb bay scallops – if from frozen as mine always are – thaw first by placing in strainer and running under cold water for 1-2 minutes.

Heat olive oil and butter over medium heat. Add garlic & onion and cook until tender. Blend in tomatoes, oregano, salt & hot pepper. Cook for approximately one minute. Add wine and simmer, stirring frequently until slightly thickened. Add scallops to sauce and cook, stirring occasionally until scallops are opaque. Cook pasta. Serve scallops and sauce over linguine.

Beef broccoli & pasta alfredo

  • 1lb ground beef
  • 1-10oz jar prepared Alfredo sauce
  • 2 cups uncooked rotini pasta
  • 3 cups fresh broccoli florets
  • 12 cup shredded Italian cheese blend

Entire meal can be made in large stew pot. Brown beef and pour off drippings. Stir in Alfredo sauce, pasta and 2 cups water. Bring to a boil. Reduce heat; cover and boil gently for 12 minutes stirring occasionally. Add broccoli & cook, covered for another 8-10 mins or until broccoli and pasta are just tender. Top with cheese.

  1. Ohhh, seafood! That sounds really yummy! I haven’t even had tuna fish in many months. 😦 A) The midwest is not known for its seafood. B) I’d really have to source it out (related to ‘A’). C) The Mr. is basically repulsed by seafood smell, never mind the taste.

    He doesn’t mind shrimp, so I throw that in every now and then. But oh, I have the Scallops Nantucket recipe that is one of my football Sunday favorites. I’ll post that on the blog soon. Maybe I’ll even make it for myself one weekend too… It’s warm and yummy. I’ve saved your Beef and Broccoli recipe too, that sounds perfectly yummy for during the week! 🙂
